Urad Dal Pooris

Urad dal pooris are irresistible. Urad dal adds extra flavor to the conventional Puri. The puffy pooris are made with wheat flour, urad dal and spices. It is also known as Urad dal poori in many parts of North India.

Ingredients
  • 3 cups Whole wheat flour
  • 1 cup Dhuli urad dal / Skinned black lentil
  • 2-inch Ginger
  • 3-4 Green chilies (Chopped)
  • 1/4 cup Oil (Plus for frying)
  • 2 tsp Salt
  • 1/4 tsp Hing
Cooking Instructions
  1. Wash and soak Urad dal in enough water for 6-8 hours.
  2. Drain the water completely.
  3. Grind the dal with ginger and green chilies in a blender to make a coarse paste.
  4. In a bowl, add wheat flour and water little by little and knead the flour into the pliable dough. Set it aside for poori dough.
  5. Now, add the urad dal paste to the salt, hing, and combine well.
  6. For the stuffing, take a lemon sized dough and smoothen the cracks and make a ball. Roll the dough and spoon about a tablespoon of urad dal filling, smoothen the edges, cover the stuffing with dough and roll the dough such that the filling doesn’t come out of poori.
  7. In a Kadai, heat enough oil to deep fry one Urad dal Poori at a time, till both sides are browned and cooked. Flip only once, such that they puff evenly.
  8. Drain the excess oil from the puffed puris with a paper towel.
  9. Serve warm Urad dal Poori with spicy Dum Aloo.
