Coconut rice is a dish prepared by soaking white rice in coconut milk or cooking it with coconut flakes. As both the coconut and the rice-plant are commonly found in the tropics all around the world, coconut rice too is found in many cultures throughout the world, spanning across the equator from the Indian subcontinent, Southeast Asia, South America, Central America, East Africa, and the Caribbean.
There are some variations of coconut rice in the South Indian states. It is an easy and flavorful rice dish made with freshly grated coconut, tempering spices, curry leaves, and rice. It is one of the most basic South Indian foods made for a meal during festivals and occasions. This simple yet delicious coconut rice is flavorful and easy to make. The ingredients like curry leaves, freshly grated coconut, chilies, ginger, and hing impart wonderful and unique flavors to the dish. The recipe I am sharing today is made with freshly grated coconut. if you have grated the coconut already, then it is easy to prepare this rice. Tastes best with freshly grated coconut. But you can use frozen coconut too.
Ingredients
- Basmathi Rice - 1 cup
- Red Chillies – 2
- Mustard Seeds - 1 tsp
- Chana Dal - 1 tsp
- Urad Dal - 1 tsp
- Cashew Nuts - 5
- Green Chillies - 4
- Curry Leaves - 1 spring
- Grated coconut -1 cup
- Coconut Oil or any oil - 1.5 tbsp
- Salt - to taste
Cooking Instructions
- Firstly, cook basmati rice and keep aside.
- Heat oil in a pan, add mustard seeds, red chilies, green chilies, chana dal, urad dal, cashew nuts, and saute it.
- In this add curry leaves, and mix all of this.
- Now add grated coconut powder or fresh great coconut, some salt, cooked basmati rice, and mix it nicely.
Ready to serve hot.
