Egg Bhurji Anda Bhurji

For supporting my new venture, my Dad has started taking interest in cooking. Today he has tried out Scrumptious Masala Scrambled eggs. I am proud to share this dish on Bawarchi Rasoi.

Ingredients
  • Large Onions - 3
  • Large Tomatoes – 1
  • Green Chillies - 4 fine chopped
  • Ginger - 1-inch piece
  • Butter - 2 tbsp.
  • Vegetable Oil - 1 tbsp.
  • Salt As Required
  • Red Chilly Powder - 1 tbsp.
  • Turmeric Powder - 1/2 tsp.
  • Pav Bhaji Masala - 1 tbsp.
  • Maggi Masala – 1/2 tsp.
  • Handful Of Coriander Leaves
  • Eggs - 8
Cooking Instructions

Preparation:

  • Fine chop the onions, green chillies, ginger and coriander leaves.
  • Break the 8 eggs into a bowl, add 1/2 tsp salt, whisk and keep aside.

Process:

  1. Heat butter in a Kadai and add the chopped onions.
  2. Fry for around 5-6 mins on medium flame till soft.
  3. Now add the chopped ginger & green chillies and fry for around 2 mins on low flame.
  4. Add chopped tomatoes, mix well and add in 1/4 tsp salt.
  5. Cook for 2 mins and then add turmeric, red chilli powder and pav bhaji masala, and Maggi masala
  6. Cook till the tomatoes are soft and the masalas are cooked.
  7. Now pour the whisked egg uniformly on the once and then add the coriander leaves mix well.
  8. Keep cooking and mixing well so that the egg gets cooked uniformly. Scramble the eggs well.
  9. Keep cooking for another 3-4 mints to your desired consistency. Serve hot with Pav or Bread, Roti.


Note

  • Always break the egg in a small bowl first and then add it to the bigger one. This is because if you will break all eggs in one big bowl and by any chance one of your egg turns out to be a bad one, then your entire bowl of eggs will get spoilt.
  • Also whisking the eggs separately in the bowl before adding in the pan makes sure the eggs scramble perfectly.
