Aloo Ki Sabzi ( Potato Curry for Puri )

This aloo curry sabzi is one of my favorites and I am sure it will become a regular dish in your kitchen. Its made from potatoes, tomato paste, and a mixture of spices. It's quick to make so can be made for breakfast, lunch, or dinner. This aloo curry usually goes well with poori, paratha, or roti. Its easy, quick to make, and also tastes yummy so try this version of aloo ki sabzi at home.

Ingredients
  • Cooking Oil - 2 Tbsp
  • Bay Leaf - 1
  • Cinnamon Sticks – 1 Small Piece
  • Cumin Seeds - 1 tsp
  • Ginger Garlic Paste - 1 Tbsp
  • Asafoetida - 1/4 tsp
  • Green Chilli - 2
  • Onion - 1
  • Coriander Powder - 1 tsp
  • Red Chilli Powder - 1 tsp
  • Turmeric Powder - 1/4 tsp
  • Tomato - 1 (1 Pureed Tomato)
  • Dried Mango Powder - 1/2 tsp
  • Boiled Potato – 3
  • Coriander Leaf
Cooking Instructions
  1. Heat oil in a Pan
  2. Add Bay Leaf, Cinnamon, and asafoetida, Cumin Once Splutter.
  3. Add Ginger Garlic Paste Saute for a minute and add green chilli.
  4. Add Chopped Onion and cook till it's translucent Now Add Coriander Powder, Red Chilli, and Turmeric Powder Sauté for 2 to 3 minutes add pureed tomato Cook till oil separates.
  5. Add 1/4 cup water and cook for 2 minutes add 1 cup water Bring it to boil and add boiled potato cover it and cook for 2 minutes garnish it with coriander leaves Delicious potato curry is ready now.
