Corn and Paneer Rice is a healthy and delicious rice dish that can be made under 30 minutes and makes for a great lunch box option.
Ingredients
- Tomato (finely chopped)
- Onion (finely chopped)
- Sweet corn
- Paneer
- Green chilly
- Tomato sauce
- Chilly sauce
- Ginger garlic paste
- Oil
- Mustard seeds
- Everest biryani masala
- Chilly powder
- Turmeric
- Salt
- Sugar
Cooking Instructions
Instructions (for paneer)
- Cut paneer into small pieces. about 1/2 inch thick
- In a small bowl mix tomato sauce, chilly sauce, ginger garlic paste, salt and rub this paste into the paneer.
- Shallow fry the paneer for about 2 - 3 minutes till they are golden brown.
- Transfer the fried paneer to a plate.
Instructions (for fried rice)
- Heat a pan with oil and add mustard seeds.
- When they begin to splutter add finely chopped onion, green chilly(optional), ginger garlic paste, and fry till onion turns golden brown.
- Next add chopped tomato, chilly powder, turmeric, biryani masala, salt, sugar, and saute till tomatoes are soften.
- Now add sweet corn and stir fry for 5 - 6 minutes.
- Then add fried paneer cubes, stir and mix well.
- Next, add cooked rice to it and mix well.
