Lauki ka Raita or Bottle Gourd Raita

Lauki ka Raita or Bottle Gourd Raita is a very tasty and refreshing raita recipe prepared with bottle gourd (lauki or doodhi), yogurt, and a mild mix of spices. This lauki ka raita is very healthy as well as easy to make. This mouthwatering lauki ka raita goes well with any dish like parathas, roti, puri, rice or pulao.

  • 2 Cup Lauki, grated
  • 1 Cup Plain Dahi
  • 1 Cups Water
  • 1 tsp. Oil
  • 1/2 tsp. Salt
  • 2 Green Chillies (fine chopped)
  • 1 tsp. Red Chillies
  • 1/2 tsp. Cumin Powder (Roasted)
  • 1/2 tsp. Black Salt
  • ½ tsp. chaat masala
  • 1/2 tsp. Cumin Seed
  • Coriander Leaves
Cooking Instructions
  1. Wash the gourd and grate it.
  2. Then heat a pan, add 1 teaspoon oil to it, cumin seed, Loki and cook it on medium flame in steam for 10 minutes
  3. Make sure that the gourd does not burn and keep running in the middle.
  4. When the gourd becomes soft, turn off the gas and let the gourd cool.
  5. Meanwhile, beat the curd into a smooth consistency in a large bowl.
  6. Then add 1 cup water mix in curd and beat smooth
  7. Take plain curd and put the cooked lauki in it.
  8. Add green chilies, cumin powder, black salt and chaat masala, salt, some more of red chilies powder.
  9. Mix all the ingredients thoroughly. Garnish with coriander leaves, red chillies powder, cumin powder, and chaat masala.
