Ram ladoo

Ram ladoo is a popular street food snack from Delhi. Laddus are normally sweet in taste, but Ram Laddus are salty and sour and are served with green chutney and grated radish. The Ram Ladoo is a savory titbit made with a batter of dals and spices.

Ingredients
  • Yellow moong dal – 1/2 cup
  • Channa dal / split Bengal gram – ¼ cup
  • Green chilies – 2
  • Ginger paste – 2 tsp
  • Cumin seeds – 1/2 tsp
  • Baking soda- 1/2 tsp
  • Coriander leaves – A small bunch, finely chopped
  • Tamarind Chutney – 1 tbsp
  • Green Chutney – 1 tbsp
  • Grated radish – 1/2 cup
  • Chaat masala – 1 tsp (optional)
  • Lemon juice- As needed
  • Salt – To taste
  • Oil- As needed
Cooking Instructions
  1. Soak moong dal and channa dal in enough water for at least 4 hours.
  2. Drain the water and grind the dals along with the green chilies, ginger paste, cumin seeds, salt, and coriander leaves into a smooth paste without adding water.
  3. Add baking soda and mix well. Keep it aside for 10-15 mins. Heat oil in a pan for deep frying. Using a spoon or with your hands, scoop out a spoonful of the batter and gently drop the batter into the hot oil.
  4. Gently flip the ladoos as they turn golden and crisp.
  5. Remove with a slotted spoon once they are cooked and place them on paper towels.
  6. Fry the remaining batches of the ladoos in the same way.
  7. Assemble 3-4 ladoos in a serving plate or bowl.
  8. Top up with some green chutney and sweet tamarind chutney.
  9. Garnish with grated radish & chopped coriander leaves.
  10. Sprinkle chat masala and lemon juice and enjoy as an evening snack.
