Kacchi Haldi Ki Sabji

A specialty winter dish from Rajasthan, Kacchi Haldi Ki Sabji is fresh turmeric and yogurt curry mildly flavored with spices. Serve it with ghee slather crispy roti for best taste. Here is how to make it.

  • 100gms Fresh Turmeric (Kachi Haldi)
  • 2 tbsp Ghee
  • 1 tsp Cumin seeds
  • 1 green chilli
  • 1/4th cup Green peas
  • 1/2 cup Curd
  • 1 tsp Red Chilli powder
  • 1 tsp Cumin-coriander powder
  • 1/2 tsp Garam masala powder
  • Pinch of Asafoetida
  • 1 tbsp Ginger Garlic paste
Cooking Instructions
  1. Peel, wash, and grate turmeric.
  2. In a bowl, add curd, red chilli powder, cumin-coriander powder and garam masala powder. Mix it well and keep it aside.
  3. Boil peas.
  4. Heat ghee in a pan.
  5. Add Cumin seeds,  ginger-garlic paste, curry leaves, asafoetida, and green chilli.
  6. Add grated turmeric and cover and cook on low flame for 10-12 minutes until the turmeric softens.
  7. Add prepared curd and some water and cover and cook for 2-3 minutes.
  8. Add boiled peas and salt and cook for 2 minutes more.

Sabji is ready
