Palak Paneer

Palak paneer makes a healthy weeknight meal and is ready in 15 minutes with this easy Instant Pot recipe. I love this one-pot recipe to cook the spinach and then use an immersion blender to puree the sauce making cleanup super easy. Serve with steamed rice for a gluten-free meal or with hot parathas for a wholesome vegetarian meal!
Ingredients
- 250 gram paneer
- 1kg palak
- 2 cup of water
- Half tbsp jeera
- Half tbsp black pepper
- Salt as per taste
- 3 medium-size onion
- 2 tbsp ghee
- 1 tbsp cream
Cooking Instructions
- 1st boiled palak once the palak changes colour slightly, drain off the blanched palak.
- Transfer the blanched palak into ice-cold water. This helps to retain the bright green colour of palak.
- Once the palak has cooled completely, transfer to a blender.
- Blend to smooth paste without adding any water. Keep it aside.
- Now in a large kadai heat 2 tsp ghee
- Add jeera and saute
- Now add onion paste
- Saute till it turns golden brown.
- Now add palak paste
- 1/4 cup water
- Salt and black pepper
- Mix well adjusting consistency as required.
- Add paneer and mix well
- Simmer for 5 minutes or till paneer absorbs the flavour.
- Now add cream and mix well
- Turn of the flame
Ready for serve
