Kande Pohe

Kande Pohe is a favourite Maharashtrian dish that is relished anytime either as a snack or as breakfast. The Poha, peanuts, freshly scraped coconut make this dish very inviting.
Ingredients
- Poha - 1 cup
- Salt to taste
- Sugar - 1 tsp
- Lemon juice - 1 tsp
- Peanuts - 1/4th cup
- Oil - 1 tbsp
- Mustard seeds - 1 tsp
- Curry leaves - 12-15 nos.
- Green chilies - 1-2 nos. (chopped)
- Onions - 2 cup (copped)
- Sugar - 1 tsp
- Turmeric powder - ½ tsp
- Coriander leaves - 1 tbsp.
Cooking Instructions
- Wash Pohe a couple of minutes in cold water
- Drain out all water and let it rest for 10 minutes
- Heat oil in a wok and add mustard seeds, add curry leaves, peanuts and fry them for 2 - 3 minutes
- Add green chillies, onion and saute all together for another 2 minutes.
- Add the turmeric powder and saute or a minute
- Now add the soaked Pohe and mix for 1 minute.
- Squeeze some lemon juice
- Add salt, sugar and for mix 1 minute.
- Cook the Pohe for 2-3 minutes.
- If the Pohe starts to get to dry sprinkle 1 tablespoon water over it and mix again.
- Switch off the flame and cover for 2 minutes.
- Sprinkle some freshly chopped coriander leaves. Serve hot with a lemon wedge.
Note
- You can also garnish of your choice with few freshly grated coconuts and sev.
