Khaman Dhokla

Khaman Dhokla is a popular vegetarian Indian snack from the state of Gujarat. It is served as a teatime snack or farsan as they say in Gujarati with a variety of sweet and spicy chutney.
Ingredients
- 1 cup - gram flour (Besan)
- 1 tsp suji
- 1 tsp ginger + green chili paste
- 1 tsp salt
- 1 tsp powdered sugar
- ½ Lemon (juiced)
- 1 tsp turmeric powder
- ½ cup curd
- some water as required better
- 2 tsp Eno fruit salt
For Tadka:
- 1 tbsp. oil
- 2 tsp mustard seeds
- 8-10 Curry leaves
- 1 Lemon (juiced)
- 1 tsp powdered sugar
- 2 Green chilies
- 1 cup of water
- For garnishing, coriander leaves
Cooking Instructions
- Take besan in a large deep bowl. Add sooji and ginger with green chilli paste to it.
- Mix them thoroughly, add salt, sugar powder and lemon juice and mix again.
- Add turmeric powder and curd, some water to the mix and whisk thoroughly.
Prepare steamer for steaming
- In a pan place a stand and add water.
- Heat the water on medium flame.
- Take a 6 by 6-inch tin and grease with oil.
- Add 1 tsp. Eno fruit salt to the Dhokla mixture - Mix well - Transfer the mixture on the mould and cover the top.
- Let it steam for about 15 minutes.
- Let the Dhokla cool.
Prepare the Tadka (seasoning) –
- In a hot oil pan, put mustard seeds.
- Saute a little and add curry leaves and green chillies. Saute well.
- Add some water, lemon juice and sugar.
- Once the water starts boiling, turn off-gas.
- Mix all pieces of Khaman Dhokla
- Garnish with coriander leaves.
- Our delicious Khaman Dhokla with Chutney ready to serve!
Note
- Remove curry leave in Khaman Dhokla before serve.
