Lauki Ki Sabji

The Lauki (Gourd) is very beneficial for our health. There are many benefits of eating it because it also contains Vitamin A, Vitamin B, Vitamin C, Vitamin E, and Iron. Many different recipes are also made from a gourd, gourd kofta, vegetable, raita, etc.

  • Bottle gourd (Lauki) – medium-sized or 700 gms
  • Oil - 2 tablespoon
  • Onion - 1 (Chopped)
  • Tomato – 2 (Chopped)
  • Green Chili - 4 medium spice
  • Cumin Seed - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Red Chili powder - 1/2 tsp
  • Garlic - 15 piece (finely Chopped)
  • Asafoetida - one pinch
  • Salt to taste
Cooking Instructions
  • Scrap the outer skin of the Lauki (bottle gourd), wash, and cut it into half inches cubes (shape does not matter, one needs small chunks).
  • Heat oil in a wok. Add cumin seeds, green chili, and garlic, add onion to change the color to light translucent, add asafoetida and turmeric powder.
  • Fry for few seconds on low flame. Now add Lauki pieces, salt, red chili powder, and tomato. Mix well and cook until Lauki gets tender. Takes about 14 -15 mints.
  • Lauki can also be made in the pressure cooker, in that case, take one whistle.
  • After one whistle, take out half the pressure of the cooker and after the half pressure is over, remove the cooker lid and stir it well on high flame for 10 minutes. Lauki ki Sabji is ready.
  • You can serve it along with roti and rice.
