Lauki Pakora (BOTTLE GOURD FRITTERS)

The rainy season is incomplete without Pakoda and Chai. Lauki means Bottle gourd is a super healthy veg. The Pakode made with this is very easy, super crispy, and delicious too.
Ingredients
- 2 Cup grated Dudhi/Lauki/Bottle Gourd
- ½ Cup – or as required Besan (Gram flour)
- 1/3 Cup Maida flour
- 2 green chili fine chopped
- 1 teaspoon ginger paste
- 1 teaspoon Red chili powder
- 1 teaspoon Turmeric
- ½ teaspoon Asafoetida (Hing)
- ½ teaspoon Cumin seeds
- Salt to taste
- 1 tbsp. Coriander Leaves
- Oil to fry
Cooking Instructions
- Wash the bottle gourd and grate it. the bottle gourd (Lauki) and squeeze out the water.
- Do not discard the water, it can be used for any gravy or one can drink it as is.
- Squeeze the excess water of lauki or bottle gourd.
- In a mixing bowl mix, all the ingredients mentioned above with bottle gourd.
- If required add a little water. The consistency should be thick so that round shape can be formed.
- Heat oil in a deep bottomed pan or Kadai.
- When the oil reaches smoking point low down the heat and releases the batter shaping round in the hot oil.
- Fry till they turn crisp and brown. Keep the heat on low else the fritters will not be cooked from inside.
- Take out the fritters on an absorbent paper from oil. Serve with tomato sauce or green chutney.
