Lauki Pakora (BOTTLE GOURD FRITTERS)

The rainy season is incomplete without Pakoda and Chai. Lauki means Bottle gourd is a super healthy veg. The Pakode made with this is very easy, super crispy, and delicious too.

Ingredients
  • 2 Cup grated Dudhi/Lauki/Bottle Gourd
  • ½ Cup – or as required Besan (Gram flour)
  • 1/3 Cup Maida flour
  • 2 green chili fine chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon Red chili powder
  • 1 teaspoon Turmeric
  • ½ teaspoon Asafoetida (Hing)
  • ½ teaspoon Cumin seeds
  • Salt to taste
  • 1 tbsp. Coriander Leaves
  • Oil to fry
Cooking Instructions
  1. Wash the bottle gourd and grate it. the bottle gourd (Lauki) and squeeze out the water.
  2. Do not discard the water, it can be used for any gravy or one can drink it as is.
  3. Squeeze the excess water of lauki or bottle gourd.
  4. In a mixing bowl mix, all the ingredients mentioned above with bottle gourd.
  5. If required add a little water. The consistency should be thick so that round shape can be formed.
  6. Heat oil in a deep bottomed pan or Kadai.
  7. When the oil reaches smoking point low down the heat and releases the batter shaping round in the hot oil.
  8. Fry till they turn crisp and brown. Keep the heat on low else the fritters will not be cooked from inside.
  9. Take out the fritters on an absorbent paper from oil. Serve with tomato sauce or green chutney.
